Marcelle’s Halibut

Claudia Ward says - “I have a great recipe that makes use of the wonderful halibut that you are offering right now. It is easy to make but impressive enough for dinner parties. I learned it from my Moroccan friend Marcelle.”

Instructions:

Add lemons, tomatoes, jalapeño, garlic to a pan.

Add half of the cilantro.

Add the fish and 1/2 cup of water to the pan, cover, bring to boil, then uncover and add the olive oil saffron mixture and the rest of the cilantro.

Simmer on medium heat uncovered and baste the saffron oil occasionally over the fish.

Cook for about 20 min until the fish is flaky.

Ingredients:

1 lb halibut

3 medium tomatoes, cut in chunks

1 lemon, seeded and sliced thinly (remove rind if it’s too thick)

½ - 1 jalapeño depending on spice preference

4 cloves of garlic

1 large bunch of cilantro, chopped

1/4 teaspoon saffron soaked in 1/4 cup of olive oil

Salt and pepper to taste
